Vobla vs taranka: what is the difference?
Vobla and taranka look almost the same. Here is how they differ — where they come from, taste, size — and which one to choose.
Same family, different seas
Both are roach, salted whole and dried in the open air. Vobla is the Caspian roach; taranka is the Azov–Black Sea roach that Ukrainians have dried for generations. In shops outside Ukraine the names are often used for the same product.
Taste and texture
Taranka is usually a little fattier and softer, with a rounder body and a generous roe sac in spring. Vobla is leaner and drier, with a sharper salty taste. Both are eaten the same way: peel, tear along the spine and enjoy.
Which one to choose
If you want the Ukrainian classic — rich meat and plenty of roe — choose taranka (dried roach with roe). If you like a drier, saltier bite, look for smaller, leaner fish or try smelt and goby.
